Salad Shirazi - Cucumber, Tomato, Onion Salad
This fresh, simple salad is packed with flavor and is served as a side dish with many Persian meals. It is naturally low in carbs and high in fiber.

unpeeled English cucumber
or 2-3 Persian cucumbers

medium tomato
1
small onion
any variety
Juice of 1 lemon

olive oil
salt and pepper to taste

Instructions
Wash and dry the cucumbers, onion, and tomato. Chop into a small dice so they are all roughly the same size. Place in a serving bowl.
Juice the lemon, remove any seeds from the juice. Add the lemon juice and olive oil to the salad mixture and stir to combine.
Serve immediately or cover and place in the refrigerator to chill before serving.
