
Salad Shirazi - Cucumber, Tomato, Onion Salad
This fresh, simple salad is packed with flavor and is served as a side dish with many Persian meals. It is naturally low in carbs and high in fiber.

- Mixing bowl
Ingredients
- ½ unpeeled English cucumber or 2-3 Persian cucumbers
- 1 medium tomato
- 1 small onion any variety
- Juice of 1 lemon
- 2 Tablespoons olive oil
- salt and pepper to taste
- 1 Tablespoon chopped parsley (optional
Instructions
- Wash and dry the cucumbers, onion, and tomato. Chop into a small dice so they are all roughly the same size. Place in a serving bowl.
- Juice the lemon, remove any seeds from the juice. Add the lemon juice and olive oil to the salad mixture and stir to combine.
- Serve immediately or cover and place in the refrigerator to chill before serving.
Notes
This salad can also be used as a fresh, refreshing topping for chicken, fish, or even tacos!
