
Kookoo Sabzi - A Persian Herb Frittata
Kookoo Sabzi is a traditional Persian frittata bursting with finely chopped aromatic herbs. This low-carb, high-protein delight is a nutritious treat. Enjoy it anytime, paired with a low-carb tortilla or on its own with crunchy radishes and pickles.
Equipment
- Large fry pan
- Mixing bowls
- Large knife
- Cutting board
- Salad spinner optional
Ingredients
- 2 bunches parsley
- 2 bunches cilantro
- 2 bunches green onion green parts only (reserve the white parts)
- 2-3 T dried dill or 1/2 cup fresh
- 2 cloves garlic minced
- 2-3 T barberries (zereshke) found in Middle Eastern stores
- 1 T flour
- 6 eggs beaten
- ¼ cup vegetable oil
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Gather the parsley and cilantro (and dill if using fresh) and pick off all of the leaves (some tender stems are ok). Place the herbs and green onions (greens only) in a large bowl and clean thoroughly in cold water. Drain well and pat dry, removing as much moisture as possible. (Using a salad spinner can speed up the process!)
- Working in batches, take a handful of the herb mixture and finely chop using a large chopping knife until all of the herbs are a cohesive mix. *For best results, do not use a food processor.
- Place the herb mixture into a large mixing bowl (add dried dill here if not using fresh).
- Add the eggs, garlic, barberries, flour, salt and pepper and mix well. Set aside.
- Heat the oil in a large fry pan. When the oil is hot, pour the mixture into the pan and spread evenly.
- Turn down the heat to medium-low and cover. Let cook until set, about 15-20 minutes.
- Using a spatula, divide into four equal pieces (like cutting a pizza). Gently flip each piece and cook an additional 10-15 minutes or until lightly browned.
- Remove from heat and garnish with walnuts and/or dried rose petals (optional).
Notes
Garnish with pickles, green onions (reserved white parts), tomatoes, and sliced radishes. Serve hot, cold, or room temperature on it's own as a side dish or pair with pita bread to make a sandwich. Enjoy!
