
Mast-o Khiar - Cucumber Yogurt
This delightful yogurt and cucumber dip combines the creamy richness of Greek yogurt with the crisp freshness of grated cucumber, accented by aromatic garlic, dill and rose petals.

Ingredients
- 2 cups Greek low-fat yogurt
- 1 cucumber grated
- 2 cloves garlic minced
- 2 tablespoons dried dill or 4 tablespoons fresh dill, chopped
- 1 teaspoon ground rose petals optional - available in specialty stores
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, and dried or fresh mint.
- Mix well until all ingredients are thoroughly combined.
- Season with salt and pepper according to taste.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Mast-o Khiar is served alongside many Persian dishes often beautifully decorated with dill, rose petals, raisins, and walnuts. I also enjoy this dish on it's own, paired with a few toasted pita triangles for a light, refreshing dinner.
